ROLLERCHEF cookers are multifunctional cookers suitable for use not only in pastry making but also in the restaurant industry. Thanks to Boscolo Rollermac's advanced technology, they can be used to make fish sauces, casseroles, gravies, braised meats, mushroom creams, pasta, rice, or for washing vegetables.
ROLLERCHEF is a multifunctional, flat-bottomed cooker with double-walled heating elements, reaching temperatures up to 180°C. It features an internal mixing paddle with double-walled scrapers to keep the product moving during cooking, preventing burning and lumps.
From the touchscreen, you can manage:
the operating temperature;
the paddle speed;
the addition of water via the flow meter during recipes or simply to clean the bowl after unloading the product;
the patented automatic tilting system to unload the entire product once finished;
recipe storage.
In addition to automatic tipping, the double-walled front valve can be used to unload products with inclusions, preventing residues from accumulating along the inside edges of the tank and thus avoiding the risk of burning product residue during new production cycles.
