ROLLERCOOK 80
Universal nougat cooker designed to produce all types of nougat in the same bowl without having to beat egg whites in a stand mixer or cook honey on an induction hob. The double-walled gas burner heating system allows a working temperature of 130°C to be reached, allowing for optimal egg white whipping thanks to the rounded bottom of the stainless steel bowl and the iconic Rollermac Boscolo spatula.
You can manage the recipe directly from the touchscreen, adjusting the cooking temperature and spatula speed.
The bowl has a capacity of 160 liters, allowing for the production of 80 kg of soft nougat. A copper bowl, similar to the old bain-marie nougat makers used in the past, can be added upon request.
