Combined coating pan with the option of using both copper and stainless steel batches for the production of praline, salted, and chocolate-covered dried fruit.
For chocolate coating, you can coat classic products such as dried fruit, as well as smaller products (puffed rice, cocoa nibs, nibs, sunflower seeds) or irregularly shaped products (popcorn, candies, chips) thanks to the special ROLLERSPRAY 9 nebulization system patented by Rollermac Boscolo. This system allows you to determine the quantity of chocolate sprayed in grams for each addition, timing production cycles based on the required recipe, and adjusting the amount of air in the sprayed chocolate directly from the gun's pressure knob, where you can increase or decrease the airflow depending on the size of the product.
The chocolate is added to the heated two-level tank where it is kept melted, preventing lumps from forming. The same tank is perfect for keeping sugar syrup melted and making candies or M&Ms, preventing solid residue from forming on the tank's inner walls. The tank is removable to change the type of chocolate, and purchasing multiple tanks is recommended to avoid having to clean them each time. This innovative system allows the enrobing process to be completely autonomous, allowing the operator to focus on other tasks without having to monitor the machine. The internal chiller allows the operator to choose between ambient, hot, cold, and dry air during the various work phases: dry air is the best option during the dragée polishing phase, speeding up the process rather than using cold air with high humidity. The coating pan is equipped with the Rollermac Boscolo patented PLUS tilting system, which controls the bowl's inclination, facilitating the discharge of the finished product directly into the stainless steel tray underneath the bowl and speeding up tank cleaning or reusing the chocolate inside. The stainless steel bowl is secured to the coating pan structure via a quick-release system, allowing the bowl to be removed and washed separately in a dishwasher without having to clean it by hand. All functions will be controlled by the PLC inside the touchscreen, which also features a recipe storage system.
Thanks to the bowl's quick-release system, the operator can remove and add the two bowls based on the type of production required. With the copper bowl, you can make caramelized and salted dried fruit with recipes based on spices such as curry, turmeric, paprika, wasabi, and the like, heating them via the gas burner underneath. The bowl with internal whiskers is made of copper so it can work in contact with the burner flame, reaching temperatures over 160°C.
Production capacity: 15 kg/h for chocolate and 16 kg/h for sugar and salted products.
